These spaces are cheerful, colorful and give life to Cuenca's daily life. In them all kinds of country products, typical food and medicinal plants are sold. The gastronomic experience begins in the Sayausí parish, where several restaurants offer the star dish: fried trout and its different presentations. This parish is located to the west of the city, on the road that leads to the Cajas National Park and later to the city of Guayaquil. Along the road, a number of establishments offer activities such as sport fishing and then prepare the dish in the same place.

This parish is well known and famous for the peculiar preparation of the traditional roast guinea pig with golden potatoes. This area is ideal to taste at the weekend, one of the richest dishes in the Ecuadorian mountains. Ricaurte is located to the North-East of the city of Cuenca.

Located west of the city of Cuenca, this sector is well known for its famous roast meats, which are served with nickname, beans cooked with cheese. You can also taste the traditional dishes of potatoes with leather and potato locro. In addition to the gastronomic offer of the parish center and its surroundings, that of the Barabón Tourist Corridor is added, where roasts are the permanent menu of the day.
